Vineyards and winemaking

Satèn is made entirely from Chardonnay grown in Ronco Calino's Sottobosco and Palazzo vineyards, on east- and north-east-facing slopes around Calino. Pebble-rich morainic soils and cooling breezes favour slow ripening, fine acidity and the delicate profile required for this uniquely Franciacortan category.

The grapes are hand-harvested and softly pressed, with a proportion of the must fermented in seasoned French oak and the balance in temperature-controlled stainless steel. Secondary fermentation takes place in bottle, followed by at least 36 months on the lees. Satèn's gentler pressure gives an especially soft, refined mousse.

Appearance

Pale straw-gold with green reflections and an exceptionally fine, compact bead.

Nose

Williams pear, white peach and pineapple are layered with magnolia, chamomile, brioche and a touch of pink pepper.

Palate

Crystalline yet creamy, with ripe white fruit, candied citrus and acacia honey carried by fresh acidity and a supple mineral line. Sweet almond and coriander appear on the long, polished finish, while the delicate effervescence gives the wine its characteristic satin texture.

Food pairing

Pair with butter-poached lobster, scallop gratin, sole meunière, asparagus risotto or delicate vegetable ravioli. Its quiet creaminess also complements sushi and soft, milky cheeses without overwhelming them.

Background story

Satèn is a Franciacorta speciality made only from white grapes and bottled at lower pressure than other traditional-method sparkling wines. The name suggests silk, an apt description for its fine bubbles and rounded palate.

Ronco Calino was founded by Paolo Radici in 1996 around the former home of celebrated pianist Arturo Benedetti Michelangeli. The estate's organically farmed vineyards and underground cellar were created with patience in mind, allowing Chardonnay extended time on its lees before release.
