Vineyards
Barcolobo’s La Rinconada Biodynamic vineyard, benefits from a continental climate with a warm winter and dry summer, which fosters balanced growth and complexity in the grapes. The vines are trained on an espalier with pruning in a royat cordon style, promoting optimal sun exposure and airflow. The manual harvest took place in the last week of August, collecting the grapes in small 15-kilogram boxes to ensure quality.
Winemaking
After selection at the winery, the grapes were destemmed and underwent a four-day cold maceration in stainless steel tanks, with the temperature controlled at 5°C. Fermentation followed, using indigenous yeasts at 22°C, reaching up to 30°C for short periods over 20 days. The wine then underwent malolactic fermentation in French and American oak barrels, where it aged for three months with medium-toast barrels. Throughout aging, three rackings were performed, timed with lunar cycles, to enhance its clarity and integrate the oak characteristics.
