Vineyards
The organic vineyards are positioned 700 metres above sea level, and benefit from a continental climate, with hot, dry summers and cold winters. The producer embraces biodiversity and minimal intervention, allowing the Cabernet Sauvignon vines to express their fullest potential in La Mancha’s distinctive clay and limestone soils.
Winemaking
The grapes are harvested at peak ripeness and fermented in temperature-controlled stainless-steel tanks, preserving the fresh fruit character and varietal integrity of Cabernet Sauvignon. A portion of the wine is aged in American oak barrels, adding structure and subtle layers of complexity.
Appearance
A deep ruby red with purple hues, indicating its youth and vibrant character.
Nose
The nose is expressive, with aromas of ripe blackberries, cassis, and hints of spice, complemented by subtle notes of vanilla and cedar from oak aging.
Palate
On the palate, this wine is smooth and well-balanced, showcasing juicy blackcurrant and dark cherry flavours. Fine tannins and a fresh acidity provide structure, leading to a lingering finish with a touch of spice and oak.
