Vineyards
Sourced from select vineyard plots in the Côte de Nuits, an area far better known for Pinot Noir but where Chardonnay thrives in specific sites with limestone-rich soils. These soils lend the wine its signature minerality and precision. Jean-Marie Fourrier follows a low-intervention philosophy, avoiding herbicides and unnecessary treatments to preserve the purity of the fruit. The estate’s white wines remain relatively rare, but their ability to age gracefully makes them highly sought after.
Winemaking
The 2012 vintage began with a cool, uneven spring, leading to low yields but excellent concentration. The Chardonnay grapes were hand-harvested and gently pressed before undergoing fermentation with indigenous yeasts in stainless steel. Ageing took place on fine lees, enhancing texture and depth. The wine was bottled unfiltered with minimal sulphur additions to maintain its purity and ageing potential.
Appearance
A deep golden hue with delicate amber reflections, indicative of its evolution.
Nose
Evolved yet fresh, with aromas of roasted almonds, dried citrus peel, ripe orchard fruits, and delicate floral notes. Hints of honey, flint, and toasted brioche add further complexity.
Palate
Silky and layered, with flavours of baked apple, preserved lemon, and toasted hazelnuts. The acidity, while softened with age, still provides freshness, supporting a rounded texture and a lingering mineral finish with subtle oxidative notes.
Food pairing
Ideal with roast guinea fowl, buttered lobster, or wild mushroom risotto. Also pairs beautifully with aged Comté or nutty Alpine cheeses, complementing its evolved complexity.
Background story
Domaine Fourrier, a family-run estate for over a century, has built a reputation for crafting wines that reflect their terroir with purity and finesse. Jean-Marie Fourrier, who took over in 1994 after working under Henri Jayer, applies the same meticulous vineyard care and minimal intervention winemaking to his white wines as he does to his acclaimed reds. Chardonnay vines are very rare in the Côte de Nuits and are all classified as AOC Bourgogne Blanc.
