Vineyards
The Grand Cru vineyard Les Preuses is located along an ancient Roman road, historically known as “voie pierreuse” (stony road). Over time, “voie pierreuse” evolved into “les preuses.” Covering 10.8 hectares, this prestigious climate faces south and southwest, ensuring prolonged sun exposure throughout the day and into the late evening during summer. The surface soils are predominantly clay-limestone, with brown hues in some areas and white, thinner clays in others. This unique soil composition imparts a distinctive mineral character to the wine.
Winemaking
Under the careful guidance of Thomas Ventoura, the grapes are hand-harvested and fermented using natural yeasts. Primary fermentation takes place in stainless steel tanks, followed by malolactic fermentation. The wine is then aged in oak barrels for six months before being returned to stainless steel tanks for further ageing until bottling. This meticulous process enhances the wine’s complexity while preserving its freshness and typicity.

Bright straw-yellow with golden highlights, indicative of its Grand Cru pedigree and youth.
Nose
A rich and inviting bouquet with aromas of ripe orchard fruits, citrus zest, and subtle floral notes, complemented by hints of toasted almonds and wet stone.
Palate
The palate offers a dense and powerful expression, with flavours of ripe apple, pear, and a touch of lemon curd. Creamy saline notes and a distinct stony minerality add depth, while vibrant acidity ensures balance. The finish is long and persistent, leaving a fresh, elegant impression.

This Chablis Grand Cru pairs beautifully with lobster, scallops, and rich poultry dishes. It also complements creamy sauces and aged cheeses.
Background story
Domaine Ventoura, based in Fontenay-près-Chablis, was established by Auguste Ventoura in 1953. Initially focused on supplying local cooperatives, the estate shifted its approach under the leadership of Thomas Ventoura, who took over in 2009. Today, Domaine Ventoura spans 11 hectares, including prestigious plots in Chablis, Petit Chablis, and Chablis Premier Cru Beauregard. Thomas adheres to sustainable viticulture, employing mostly organic practices and dedicating significant time to vineyard management.
The winery combines traditional methods with modern techniques, ensuring that each wine reflects the unique characteristics of its terroir. Domaine Ventoura’s wines have gained recognition for their purity, precision, and depth, positioning the estate as a rising star in the Chablis region.
