Winemaking
The grapes are hand-harvested and carefully sorted to select only the finest fruit. Fermentation occurs in French oak barrels, with 20% being new, imparting subtle complexity while preserving the wine's purity. The wine is aged on fine lees for 12 months in oak barrels, followed by an additional 6 months in stainless steel tanks, harmonising the flavours and enhancing freshness.
